Meet ‘Romanesco’, the striking lime-green cauliflower with mesmerising spiral florets that look almost too beautiful to eat! This Italian heirloom produces firm, nutty-flavoured heads with a delicate texture that sits somewhere between broccoli and cauliflower. Productive, delicious and visually unforgettable — it’s a showstopper in both the veg garden and the kitchen.

🌱 How to Grow:

Sowing Time (South Africa):

Late summer to autumn (January–April) for autumn to winter harvests.
In cooler regions, sow late summer for best head formation before deep winter cold.

Germination:

7–14 days at 15–22°C
Sow 5–10 mm deep in trays or directly into prepared beds.

Transplanting:

Transplant seedlings when 10–15 cm tall and sturdy.
Space 45–60 cm apart to allow for large head development.

🌞 Position:

Full sun.
Cool-season crop that performs best in mild to cool temperatures.

🪨 Soil:

Rich, fertile, well-drained soil enriched with compost or aged manure.
Heavy feeder — requires good soil nutrition for tight head formation.
pH: Neutral to slightly alkaline (6.5–7.5).
Avoid acidic soils for best results.

💧 Watering:

Moderate and consistent.
Keep soil evenly moist during growth and head formation.
Avoid water stress to prevent small or loose heads.

🌼 Harvest Time:

75–100 days from sowing (depending on climate).
Harvest when heads are firm, compact and bright green.
Cut before florets begin to separate for best flavour and texture.

📏 Height & Spread:

60–90 cm tall
45–60 cm wide
Forms a central, sculptural spiral head.

🌿 Top Tips:

✔️ Feed regularly with a balanced vegetable fertiliser.
✔️ Mulch to maintain even soil moisture and temperature.
✔️ Protect from caterpillars with netting if needed.
✔️ Harvest promptly for peak flavour and texture.
✔️ Excellent roasted, steamed or enjoyed raw.

🐝 Pollinator Friendly:

If allowed to flower, produces yellow blooms that attract bees and beneficial insects.
